Hello and welcome back to Hi Arbor.  Today's newsletter has web addresses for specialty produce and Peruvian cuisine recipes and information.  The web sites have a lot of interesting information. 
 
Here's a simple addition to your July 4th cookout - get some good quality loose black tea leaves [or 8 tea bags] and steep some in hot water for 10 minutes to make a strong tea concentrate.  Add one cup of sugar to the hot concentrate to dissolve the sugar then add enough cold water to make a gallon of tea.  Serve over ice in a tall glass.

PERUVIAN CUISINE:  
Causa
is a Peruvian recipe from the web address below the recipe.  I looked "causa" up in a Spanish-English dictionary and it means a light lunch or snack.  Causa was the only vegan recipe at the web address, but there are several vegetarian recipes there.  However, the second web address below has recipes and a lot of information,  Have fun visiting Peru through its cuisine.

CAUSA

8 yellow or white potatoes, unpeeled
3 Tbsp. lemon juice
1/2 cup oil
Salt & Pepper
1 tsp. hot yellow peppers, ground
Cook the potatoes; remove skins and mash well. Add the lemon juice, salt, pepper, and hot peppers. Shape into small balls or spread on platter, and cover with the following sauce.
Sauce:
2 onions, thinly sliced
1 fresh hot pepper, cut in strips
Salt & Pepper
1 Tbsp. oil
Juice of 1/2 lemon

Wash onion and pepper slices in cold water. Drain and season with salt and pepper. Add the oil and lemon juice and mix well. Garnish with the following: ripe olives, fresh cheese, sliced hard-boiled eggs, cooked shrimp, pieces of fried white fish, and lettuce leaves.
