Hello, and welcome back to Hi Arbor.  Today's newsletter features asparagus.  Information about this tasty easy to cook vegetable is given and a recipe courtesy of Cooks.com.  Then there are two web sites listed with asparagus recipes.  Both of these web sites have a lot of other recipes.

     ASPARAGUS:  Asparagus is in season.  Here is some information about asparagus from Wikipedia, a free online encyclopedia.  There is a lot more information at the link below.

"Asparagus officinalias is a plant species in the family Asparagaceae from which the popular vegetable known as  asparagus is obtained.

"Asparagus has been used from very early times as a culinary vegetable, owing to its delicate flavor and diuretic properties. There is a recipe for cooking asparagus in the oldest surviving book of      recipes, Apicius's 3rd century AD De re coquinaria, Book III."

                                       DIJON ASPARAGUS SALAD

  2 oz. linguine, broken in 1/2
  1/2 asparagus, cut diagonally into 1 1/2 inch pieces
  9 cherry tomatoes, quartered
  2 tbsp. chopped red onion
  1/3 c. poppy seed salad dressing
  2 tbsp. Dijon style mustard
  1/4 tsp. salt
  1/4 tsp. pepper
  1/4 c. almonds

In a large saucepan, cook linguine in boiling water for 5
minutes. Add asparagus and cook 3 to 4 minutes. Drain and
rinse with cold water. Turn into a bowl. Add tomatoes and
onion. In a small bowl, combine salad dressing, mustard,
salt, and pepper. Add to paste mixture. Toss gently to
coat. Cover and chill for 2 hours or overnight. Before
serving, toss gently with almonds.

"Take This Veggie And Stuff It" has recipes for stuffing 21  vegetables from artichokes to zucchini, and if you don't know how to stuff an artichoke, the book explains. There are 87 recipes, some of which have seafood but most are vegetarian.  Substitutions, measurements and equivalents are listed. Herbs and seasonings are defined and there is a glossary of cooking terms in addition to a list of how much of a fresh spice is needed  versus the same spice in a dry form.
