AMERICAN INSTITUTE FOR CANCER RESEARCH (www.aicr.org):

This organization focuses on cancer prevention through diet. AICR promotes a diet high in vegetables, fruit, grain and legumes and low in meat, or as an AICR brochure puts it "the idea is to let the veggies crowd the animal protein to one corner of your plate". The organization has a number of brochures and one of them is "Veggies," with vegetarian recipes. The link below will take you to the veggie brochure. You can print the brochure from the AICR website or write to them via postal mail and ask for a regular brochure, which is what I did. I asked for a copy of each brochure that has recipes. They sent them and since postage alone was almost $5.00, I sent them a donation to help out. The AICR is an affiliate of the World Cancer Research Fund.

 The following recipe is my version of something I saw in the newspaper.

SMALL APPLE-CELERY SALAD FOR ONE OR TWO:

1 apple, cored, peeled and chopped
1 celery stalk, sliced
1 pineapple slice, chopped
1 handful raisins or to taste
1 handful pecan pieces or to taste
2 Tablespoons favorite salad dressing [I used 1,000 Island]

Mix the ingredients and eat immediately or let chill so that the flavors mingle.


HI ARBOR COOKBOOK:

Hi Arbor now has a cookbook, "Take This Veggie And Stuff It", now on sale. This cookbook has recipes for stuffing 21  vegetables from artichokes to zucchini, and if you don't know how to stuff an artichoke, the book explains. There are 87 recipes, some of which have seafood but most are vegetarian. It's got lists of substitutions and measurements and equivalents.  Herbs and seasonings are defined, there's a glossary of cooking terms in addition to a list of how much of a fresh spice is needed versus the same spice in a dry form. "Take This Veggie And Stuff It" costs $12.50 per copy plus $2.50 for shipping and handling, and it can be ordered from
